Pineapple Salsa Pork Tacos

Ingredients:
- 8 oz pineapple, diced; reserve ¼ cup juice
- 1 medium onion, thinly sliced + 1Tbsp diced
- ½ oz fresh cilantro (optional), roughly chopped
- 1 lime, quartered
- 1 green pepper, thinly sliced
- 1 lb ground pork
- 1 pkg low sodium taco seasoning
- ¼ cup water
- 2 Tbsp chipotle in adobo paste, finely chopped
- 12 (6”) taco size soft tortilla shells
- 3 Tbsp sour cream
- Salt/Pepper
- 1 tsp olive oil
Directions:
- In a small bowl, combine pineapple, 1 Tbsp minced onion, half the cilantro, and a squeeze of lime juice. Season with salt and pepper. Set aside.
- Heat a drizzle of oil in a large skillet over medium-high heat. Add sliced onions and green peppers. Cook, stirring occasionally, until lightly browned and slightly softened. Season with salt and pepper. Remove from pan; set aside.
- Cook pork, breaking up meat into pieces, until browned. Drain fat.
- Stir in taco seasoning, ¼ cup pineapple juice, ¼ cup water, and chipotle in adobo sauce. Heat until thickened.
- Return onions and green peppers to pan.
- Remove from heat and add in remaining cilantro.
- Wrap tortillas in a damp paper towel and microwave for 30 seconds.
- 3 tacos per serving. Fill tortillas with pork filling. Top with pineapple salsa and sour cream. Serve with a lime wedge.
