Pineapple Salsa Pork Tacos

Ingredients:

  • 8 oz pineapple, diced; reserve ¼ cup juice
  • 1 medium onion, thinly sliced + 1Tbsp diced
  • ½ oz fresh cilantro (optional), roughly chopped
  • 1 lime, quartered
  • 1 green pepper, thinly sliced
  • 1 lb ground pork
  • 1 pkg low sodium taco seasoning
  • ¼ cup water
  • 2 Tbsp chipotle in adobo paste, finely chopped
  • 12 (6”) taco size soft tortilla shells
  • 3 Tbsp sour cream
  • Salt/Pepper
  • 1 tsp olive oil

Directions:

  1. In a small bowl, combine pineapple, 1 Tbsp minced onion, half the cilantro, and a squeeze of lime juice. Season with salt and pepper. Set aside.
  2. Heat a drizzle of oil in a large skillet over medium-high heat. Add sliced onions and green peppers. Cook, stirring occasionally, until lightly browned and slightly softened. Season with salt and pepper. Remove from pan; set aside.
  3. Cook pork, breaking up meat into pieces, until browned. Drain fat.
  4. Stir in taco seasoning, ¼ cup pineapple juice, ¼ cup water, and chipotle in adobo sauce. Heat until thickened.
  5. Return onions and green peppers to pan.
  6. Remove from heat and add in remaining cilantro.
  7. Wrap tortillas in a damp paper towel and microwave for 30 seconds.
  8. 3 tacos per serving. Fill tortillas with pork filling. Top with pineapple salsa and sour cream. Serve with a lime wedge.
