Red Wine Braised Short Ribs

Number of Servings: 4

Ingredients:

  • 4 beef short ribs, about 2 pounds
  • 1 large yellow onion, diced
  • 1 Tbsp butter
  • 3 cloves garlic, finely chopped
  • 2 cups beef broth, low-sodium
  • 1 cup dry red wine (I used Cabernet Sauvignon)
  • 2 Tbsp brown sugar
  • 6 oz can tomato paste
  • 2 Tbsp Worcestershire sauce
  • ½ tsp pepper
  • ½ Tbsp chopped fresh thyme (or ½ tsp dried)
  • Optional: cornstarch

Directions:

  1. Season short ribs with salt and pepper on all sides.
  2. Heat cast iron skillet over high heat and add butter. Once the skillet is very hot, carefully add short ribs. Sear ribs on all sides for about 30 seconds until you have a nice crust. Transfer seared ribs to your slow cooker. Drain most of the butter out of the skillet.
  3. In the same skillet, add remaining ingredients. Simmer for about 10-15 minutes.
  4. Carefully pour red wine sauce over the short ribs.
  5. Cook in your slow cooker on the low setting for 8 hours (or on high setting for 4 hours). For the last hour of cooking, vent lid to thicken sauce.
    1. To thicken the sauce more, pour the sauce into a saucepan and heat to a boil. Remove about ½ cup sauce and whisk in a few Tbsp of cornstarch until smooth. Pour cornstarch mixture back into the saucepan and whisk to combine. Cook for a few minutes until thickened.
