Oven Roasted Turkey

Turkey:

Ingredients

  • 1 (14 pound) whole turkey, thawed
  • 1 large onion

Marinade:

  • 1/2 cup chicken broth
  • 1/2 cup lemon juice (about 3 lemons, save rinds)
  • 1/2 cup butter, melted
  • 1 Tbsp garlic powder
  • 1 teaspoon English mustard powder
  • 1 teaspoon minced ginger powder

Herbed Butter:

  • 1 cup butter, softened
  • 4 sprigs fresh rosemary, leaves stripped and finely chopped
  • 3 sprigs fresh thyme, leaves stripped and chopped
  • 2 cloves garlic, minced
  • 1 pinch salt and ground black pepper to taste (optional)

Directions:

When I made a turkey for Christmas, I prepped the turkey the night before then baked in the morning.

  1. Remove neck and giblets from turkey cavity. Rinse turkey with cold water.
  2. Marinade: Stir chicken broth, lemon juice, melted butter, garlic, mustard powder, and ginger together in a bowl. Cover bowl with plastic wrap and let sit about 30 minutes for flavors to develop.
  3. Herbed Butter: Mix softened butter, rosemary, thyme, garlic, salt, and pepper together in a bowl until rub is evenly combined.
  4. Place turkey in roasting pan. Separate skin from the meat of the turkey by running your hand under the skin to separate. Spoon rub mixture evenly under the skin in several different parts of the turkey. Spread remaining rub mixture on the outside of the turkey, over the wings, breast, underneath, and in the cavity.
  5. Pour marinade into a meat injector and inject the meatiest parts of turkey with marinade, changing the angle of the needle several times.
  6. Stuff cavity with onion chunks and lemon rinds.
  7. Cover with plastic wrap. Refrigerate turkey for 12 to 24 hours.
  8. When ready to bake, preheat oven to 350 degrees.
  9. Tent turkey with foil, bake 20 minutes for every pound your turkey is. Insert meat thermometer straight down where the thigh and breast connect. You want the thigh to register 165 degrees F. Let turkey rest for 30 minutes before carving. While the turkey rests, make gravy with pan drippings using the recipe below:
